shrimp scampi by mainahgirl

2 sticks margarine (or 1 stick margarine & 1 stick butter)
1 lb. raw cleaned & deshelled shrimp fresh (or thawed out if frozen)
2 tbls minced garlic in the juice
5 oz. of green olives
splash of white wine or olive juice
1/2 lb. linguini pasta ( no substitute)
1 small finely chopped onion


put a large pan of water on to boil, meanwhile prepare onions & shrimp; melt butter in a large frying pan on medium heat;add linguini to the boiling water, stir often: when butter melts in frying pan, stir in onion & garlic, cook on medium heat for about 10 minutes while pasta cooks; when pasta is almost done; add the shrimp, olives & wine or olive juice: cook on medium high heat til shrimp is just pink, about 3-5 minutes (cook time will depend on size of shrimp) ; drain linguini & put back in large pan; add shrimp mixture & mix it all up; let stand 5 minutes & serve ..enjoy !i sometimes make garlic bread to go with it.....
